Garlic Mushrooms

Sautéed garlic mushrooms cooked gently in olive oil with fresh herbs, delivering rich umami flavour without heavy creams or butter. Fibre-rich, antioxidant-packed, and cholesterol-friendly, this simple yet elegant dish makes a versatile, heart-healthy side or light meal.

Ingredients
  

  • 250 g 9 oz button or chestnut mushrooms, cleaned and left whole
  • 2-3 garlic cloves minced
  • 1 small onion finely chopped (optional for sweetness)
  • 2 tbsp extra virgin olive oil instead of butter
  • 2 tbsp low-sodium vegetable stock or water, to keep it moist
  • ½ tsp smoked paprika
  • Fresh parsley chopped
  • Pinch of salt & black pepper

Method
 

  1. In a large non-stick pan, heat olive oil over medium heat.
  2. Add the onion and cook for 2–3 mins or until soft. Add the garlic and cook for 1 more min.
  3. Stir in the mushrooms, season with salt, pepper, and the paprika.
  4. Cook for 5–7 mins, stirring occasionally, until browned.
  5. Add the vegetable stock and simmer for 2–3 mins until mushrooms are tender and coated in a light sauce.
  6. Sprinkle with fresh parsley and enjoy hot.
