Method
- In a large non-stick pan, heat olive oil over medium heat.
- Add the onion and cook for 2–3 mins or until soft. Add the garlic and cook for 1 more min.
- Stir in the mushrooms, season with salt, pepper, and the paprika.
- Cook for 5–7 mins, stirring occasionally, until browned.
- Add the vegetable stock and simmer for 2–3 mins until mushrooms are tender and coated in a light sauce.
- Sprinkle with fresh parsley and enjoy hot.
