Method
- Slice the strawberries and mix all berries in a bowl. Add honey/maple if needed.
- Stir the vanilla extract into yogurt. Chill until ready to serve.
- Break meringue nests into chunks. In glasses or bowls, layer the yogurt, meringue, and berries. Repeat.
- Serve immediately for crunch, or let sit 10–15 minutes if you prefer a softer texture. Garnish with mint.
- To make the sauce (optional) place a cup of berries in a small saucepan over medium heat. Add the honey/maple and lemon juice.
- Cook for 5–7 minutes until berries break down and sauce thickens slightly. Add a splash of water if too thick. Then allow to cool then drizzle over everything.
