Eton Mess

A light, cholesterol-friendly twist on Eton Mess with crisp meringue, fresh berries, and a yogurt-based cream alternative. Sweet, tangy, and refreshing, this dessert delivers indulgence with heart-healthy balance, combining flavour, fibre, and freshness in every spoonful.

Ingredients
  

  • 4 store-bought meringue nests plain, unfilled
  • 1 cup low-fat Greek yogurt or soy/coconut yogurt for dairy-free
  • 1 tsp vanilla extract
  • 2 cups fresh mixed berries strawberries, raspberries, blueberries, blackberries
  • 1 tsp honey or maple syrup optional, for sweetness
  • Fresh mint leaves to garnish

Method
 

  1. Slice the strawberries and mix all berries in a bowl. Add honey/maple if needed.
  2. Stir the vanilla extract into yogurt. Chill until ready to serve.
  3. Break meringue nests into chunks. In glasses or bowls, layer the yogurt, meringue, and berries. Repeat.
  4. Serve immediately for crunch, or let sit 10–15 minutes if you prefer a softer texture. Garnish with mint.
  5. To make the sauce (optional) place a cup of berries in a small saucepan over medium heat. Add the honey/maple and lemon juice.
  6. Cook for 5–7 minutes until berries break down and sauce thickens slightly. Add a splash of water if too thick. Then allow to cool then drizzle over everything.
