Easy Oat Pancakes with Bananas

Fluffy oat pancakes naturally sweetened with ripe bananas, cooked golden and served warm. Fibre-rich and heart-healthy, this easy recipe offers a wholesome, cholesterol-friendly breakfast that balances natural sweetness, comfort, and nutrition in every delicious bite.

Ingredients
  

  • 120 g rolled oats
  • 150 ml oat milk
  • 1 medium banana
  • 2 small eggs
  • 2 tsp baking powder
  • Vanilla extract
  • A dash of cinnamon
  • Maple syrup
  • Chopped walnuts
  • Avocado or rapeseed oil

Method
 

  1. Blend the oats, oat milk, eggs, oats, banana, baking powder and vanilla extract
  2. Heat a non-stick pan over a medium heat
  3. Add a small amount of oil to the pan
  4. Ladle some of the mixture into the pan and cook for 1-2 minutes until it begins to set
  5. Flip the pancake and cook for another 1-2 minutes
  6. Serve onto a plate then add the chopped banana and walnuts
  7. Drizzle will maple syrup.
