Method
- Add the flour, thyme, paprika, mixed herbs, onion powder, garlic powder to a bowl with a pinch of Himalayan salt and black pepper and mix well.
- Cut the chicken to approximately 1cm thick slices (by halving the chicken breast, then halving again through its middle. If too thick flatten with a mallet or rolling pin. The chicken should be approximately 2cm wider than the bread roll as it will shrink when it cooks.
- Place the chicken in the seasoning mix and coat on both sides and pat down.
- Place a wide base pan over a medium heat and add a splash of olive or avocado oil.
- Cook for 3-4 minutes on each side or until brown and fully cooked.
- To assemble the burger, add a pinch of black pepper to the mayo and spread evenly on each side of the bun. Lay the sliced tomato on the bottom bun and add the chicken. Then place the remaining salad on top and add the top bun to close
