Slow Cooker Red Lentil Dahl

Creamy red lentils slow-cooked with tomatoes, garlic, ginger, and aromatic spices. This nourishing, protein-rich dahl is fibre-filled, cholesterol-friendly, and deeply comforting, delivering wholesome flavour and heart-healthy benefits in every spoonful.

Ingredients
  

  • 1 tbsp Vegetable Oil
  • 1 onion chopped
  • 1 red chilli chopped
  • 2 tomatoes chopped
  • 4 garlic cloves chopped
  • 5 cm piece of ginger
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 180 g red lentils rinsed
  • 400 g/14oz can of chopped tomatoes
  • 600 ml 1 pint of vegetable stock
  • Lemon
  • Coriander leaves

Method
 

  1. Preheat the slow cooker.
  2. Heat the oil in a large wide base pan over a low heat.
  3. Add onion and cook for 4-5 minutes.
  4. Add the ginger, garlic and chilli and cook for 2-3 minutes.
  5. Add the spices, lentils and (fresh) tomatoes and stir well.
  6. Season with salt and pepper.
  7. Add everything to the slow cooker.
  8. Add the can of tomatoes and vegetable stock.
  9. Place the lid on the slow cooker and cook on high for 4 hours or low for 8 hours.
  10. Season with salt and pepper and lemon (if required).
  11. Stir through the coriander and serve with rice.
