Garlic Salmon and Pesto Bucatini Pasta

Tender garlic-seared salmon tossed with bucatini pasta, fresh basil pesto, and a squeeze of lemon. Rich in omega-3s and fibre, this elegant, cholesterol-friendly dish balances creamy, herby flavours with heart-healthy nutrition for a satisfying Mediterranean-inspired meal.

Ingredients
  

  • 2 salmon fillets
  • 200 g Bucatini Pasta
  • 190 g/70oz reduced fat pesto
  • 3 cloves garlic
  • olive oil
  • 1 lemon
  • ground black pepper

Method
 

  1. Add the pasta to a large pan of boiling water.
  2. Place a separate (wide base) pan over a medium heat and add a splash of olive oil..
  3. Add the salmon fillets to the pan (skin side down) and cook for 3-4 minutes.
  4. Flip the salmon and cook for 3-4 minutes.
  5. Add the chopped garlic and another splash of olive oil and cook for 1 more minute.
  6. Use a fork or spoon to break up the salmon into smaller pieces. then remove from the heat.
  7. Once the pasta is boiled, dip a small cup into the water and fill it half way with the pasta water.
  8. Drain the pasta then add to the pan with the salmon and garlic and add the pesto then mix well.
  9. Add a splash or two of pasta water until you reach your preferred consistency.
  10. Add a squeeze of lemon, then drizzle with olive oil and season with black pepper.
