Ingredients
Method
- Heat the olive oil in a wide base pot. Add the onions, carrots, celery, a pinch of salt and black pepper and cook for 10 minutes.
- Add the garlic and cook for 1 minute.
- Add the remaining ingredients (including the canned tomatoes and vegetable stock) then cover and simmer for 30 minutes.
- Season to taste.
- Drizzle with a dash of olive oil and serve.
- Store the remaining portions in an airtight container for up to 2 days.
