Minestrone Soup

A hearty, cholesterol-friendly soup filled with fibre-rich barley, beans, and seasonal vegetables. Ingredients
  

  • 2 tablespoons olive oil
  • 2 yellow onions chopped
  • 3 carrots sliced
  • 3 celery sticks sliced
  • 4 garlic cloves finely chopped
  • 2 x400g/14oz can chopped tomatoes
  • 2 x400g/14oz can of mixed beans
  • 1 cup chopped green beans
  • 1 cup of peas
  • 1 chopped potato
  • 2 L vegetable stock
  • 2 bay leaves
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ cup barley
  • Sea salt and ground black pepper

Method
 

  1. Heat the olive oil in a wide base pot. Add the onions, carrots, celery, a pinch of salt and black pepper and cook for 10 minutes.
  2. Add the garlic and cook for 1 minute.
  3. Add the remaining ingredients (including the canned tomatoes and vegetable stock) then cover and simmer for 30 minutes.
  4. Season to taste.
  5. Drizzle with a dash of olive oil and serve.
  6. Store the remaining portions in an airtight container for up to 2 days.
